3. Combine mascarpone, egg yolks, and sea salt in a second bowl and use the mixer to blend until smooth.
4. Use a spatula to gradually and carefully fold egg whites into mascarpone mixture. Use a folding movement to incorporate without breaking the air bubbles in the egg whites.
5. Scoop mixture to form six circular discs on the parchment paper. Bake for 25-35 minutes until golden brown.
The lack of flour in this bread makes it extremely low carb, and it is also low calorie. The recipe yields six rolls at 98 calories per serving.
Other Tips
Here are some additional tips that will make your bread come out terrific.
· The tartar sauce is optional but it will help the egg whites form those stiff white peaks.
· Egg whites will also be easier to form into stiff peaks if you use them at room temperature. To hasten the process, run them under warm water.
· Mascarpone will also be hard to work with if it is not at room temperature. Cutting it into cubes will help it warm up faster.
