    Vegetarian Potatoes Recipe

     

    There are many reasons why a person becomes a vegetarian. Eating vegetarian is healthy, it’s kinder to the environment and it helps protect animals.

    This is an easy to make traditional Hungarian vegetarian potato recipe with a tangy twist that the whole family is sure to love.

     

    Ingredients:

     

          2 tbsp vegetable oil

          3 large waxy potatoes cut into bite sized pieces, about 3 cups

          1 medium yellow onion thinly sliced

          3 cloves garlic, minced

          2 tbsp sweet Hungarian paprika

          1/8 tsp cayenne pepper (optional)

          ½ cup vegetarian broth

          ½ cup dry white wine

          ½ of a 14 oz can diced tomatoes

          1 tbsp unsalted butter

          ¼ cup full fat sour cream

          Salt and pepper

     

    Directions:

     

    1.              Heat a large nonstick skillet over medium high heat. Add oil and potatoes plus a few pinches of salt. Sautee 3 -5 minutes until potatoes begin to brown. Add onions and sauté another 3 minutes until potatoes soften and brown.

    2.              Add garlic, paprika, and cayenne, and stir until blended. Add broth and wine immediately to prevent paprika from burning. Stir in tomatoes and bring to a boil.

    3.              Add butter. Reduce heat to medium and simmer uncovered 15 to 20 minutes until potatoes are very tender. Turn off heat and stir in sour cream. Add salt and pepper to taste.
